Early Green Mango Harvesting

They have the most beautifully scented mangos in this area. They are the size of the palm of your hand. 30 minutes away, the mangoes ripen perfectly and seemingly every household with a house near the main road sells them on the street during mango season.
Here, in my pueblo, the mango skins are streaked a dark black with disease right before they ripen, the abundant crops are completely unusable outside of duck feed or compost.
This year, I decided, to harvest ours early (we have several young trees), and make some green mango chutneys and pickles from all over the world. Many countries collect the fallen baby mangos after a monsoon and have epic recipes.
